Matzah Pudding (and a Chocolate version)

Stack of Matzoth This recipe is based on my mothers one, which is based on my grandmas. It tastes great fresh but even better a day later and can be eaten cold or hot (my preference). I have given you two versions, one is the traditional version, the second is a chocolate version which is very rich.

        Traditional Matzah Pudding:  Ingredients: 8 Sheets of Matzah 4 eggs 2 apples (pealed and finely diced) 1 tbsp cinnamon 1 cup firmly packed brown sugar 4 tbsp melted margarine 1 cup of raisins   Method: 1) Soak the Matzah in water 2) Mix together the eggs, sugar, apples, cinnamon, and raisins 3) Squeeze the water out of the Matzah and with your hands, tear up the Matzah and mix in with the egg mixture 4)  Mix in the melted margarine. If the mixture looks too dry, add in another egg. 5) Put mix into a square silver foil container and bake for around 45 minutes - Oven temperature should be 190/170 fan   Chocolate Matzah Pudding:  Ingredients: 8 Sheets of Matzah 4 eggs 2 apples (pealed and finely diced) 1 cup firmly packed brown sugar 4 tbsp melted margarine 1 cup of chocolate chips (more if you would like) Method: 1) Soak the Matzah in water 2) Mix together the eggs, sugar, apples and chocolate chips 3) Squeeze the water out of the Matzah and with your hands, tear up the Matzah and mix in with the egg mixture 4)  Mix in the melted margarine. If the mixture looks too dry, add in another egg. 5) Put mix into a square silver foil container and bake for around 45 minutes - Oven temperature should be 190/170 fan (keep an eye on it and if it is burning cover.
